Aglio Pizzeria: From Denton Pop-Ups to a Yoga-Studio Dining Room

A yoga studio is an unexpected place to plan a pizza dinner. At Aglio Pizzeria on West Congress Street, it is part of the restaurant’s identity. Stacy Dockins is Aglio’s founder, owner and chef. The restaurant’s own story credits her with creating the concept, developing the menu and shaping the guest experience. She also founded and owns Yoga Project. Dave Dockins concentrates on dough development and wood-fired cooking, refining the fermentation, flour, temperature and timing behind each batch.

The business grew out of years of family pizza-making. In a March 2024 Hottest Plate interview, Stacy and Dave described how pop-ups in 2023 helped them connect with the community and pursue a longstanding pizzeria idea. The shared studio location followed, with a soft opening in March 2024.

The pizza follows a Neapolitan-style, wood-fired approach. Aglio’s ordering page describes dough made with Italian flour and fermented for 72 hours. The menu moves between familiar combinations and more individual ones: a margherita sits alongside the namesake Aglio pizza, which combines garlic confit, rosemary and smoked bacon with cheese. These are menu examples, not a promise of availability on a particular evening.

The online menu also includes salads, espresso drinks, house-made ice cream, wine and beer. Check the current selection when planning your visit, whether you’re looking for a pizza to take home or dinner with dessert.

A little planning helps. Aglio serves dinner Thursday through Saturday from 5:30 to 8:30 p.m., makes a finite number of pizzas and offers limited online ordering slots.
